So you did an encode using a source that was already encoded? That's a bad practice... the only sources you should encode from are an untouched WEBRip, a DVDISO or a BDMV. You never want to encode from a BDRip or DVDRip source.
Yeah, bad practice doens't actually mean jack for how the video looks. Considering the end goal is 720p that can be played on a toaster with a filesize to just stay outside of bit-rape range, the horribly bloated 10Mb/s 1080p encode is as good of a source as DVDISO, except more convinient.

You could have had the same end goal that you described if you used a BDMV of this anime and downsized it to 720p properly.
Re-encoding video from another release makes your release a remake. The only exception is when the source is an untouched stream rip, if and only if the script is significantly different. Please mark your remakes red in the future.
